poached eggs di parma

The mister whipped up a tasty brunch today inspired by a dish he had on his last trip to LA at Urth Caffe. Lucky me!

Toasted brioche topped with fresh, slightly melted mozzarella, baby arugula tossed in basil oil and rolled in a piece of prosciutto di parma, a poached egg and finished with chopped tomatoes drizzled with a little more basil oil. YUM!
